Farmers Chile Market

Roasting chile since 1977, we have a great pedigree in the chile roasting scene in New Mexico.

Every year between August and October, we sell all things chile in Albuquerque. If you are looking for a delicious red chile ristra, you can be sure that there is a big selection including Sandia and pequin varieties of chile. More than just that, we have plenty of multi colored Hatch chile ristras for an even more vibrant sensory experience.

Both green and red Hatch chile is available raw and roasted, fresh and frozen. More than just that, we support our local farmers in Hatch and other areas of New Mexico, and sell almost entirely local products. As we are open in the late summertime, there are plenty of local fruits that are in season during the chile season.

We have many different types of chile available, from mild like a bell pepper, to spicy enough for any chile lover. Hatch chile is special, because it has a lot of size and meatiness, but also possesses a good amount of capsaicin too. It is a great thing to use to add lots of flavor and spice to any dish. Big Jim chile is the largest pepper in the world, and is great for things like stuffed chile rellenos. Lumbre is the perfect chile for those who love a lot of heat. Rest assured, you can find both of these varieties and much more in the northeast heights at 2010 Eubank Blvd NE in Albuquerque.

New Mexican cuisine is famous for a reason that goes beyond just spicy food. Whether you like green or red chile, spicy or not, there are plenty of chiles in New Mexico just for you. It can be as simple as throwing chopped roasted green chile onto a sandwich, or be as complex as you want. Red chile sauces made with dried chile from ristras can also be as simple as blending, or as complex as a demi glace reduction. In order to get more chile flavor with less spice, you can also blend different varieties together in order to make a unique and perfectly calibrated flavor.

Visiting Farmers Chile Market is a great thing to do in Albuquerque, because chile is an inseparable part of both Albuquerque and New Mexico. While you are exploring different Breaking Bad locations, you can check out a chile roaster nearby on Eubank Blvd near I-40. It is fun to watch and smell Hatch chile being roasted, and sampling fresh roasted chile is simply divine. Chile roasting is a unique aspect of New Mexican culture. Local people go wild every year for both green and red chile,
